Mexican Salsa
MEXICAN SALSA

1 tbs ground cumin
1 tbs ground coriander
1 tsp chilli flakes (optional)
1 tbs olive oil
2 cloves garlic, minced
1 brown onion, diced
1 can diced tomatoes (400g)
1 pinch sugar
salt and pepper, to taste
Method
- Heat a medium saucepan, add oil. Place cumin, coriander, chilli flakes (if using) and diced onion in pan, cooking until softened.
- Add tomatoes and sugar. Cook for 10 minutes over medium heat, with the lid off, stirring occasionally.
- Season with salt and pepper.
- Allow to cool before spooning carefully into jars.
TIP: The chilli makes this dish a medium heat, so if you have kids, it might be best to leave the chilli out.
