BOLOGNAISE PIES

1 quantity bolognaise sauce mix
1 cup frozen (or fresh) vegetables, chopped
100g button mushrooms, quartered
1 tbs water (to brush ramekins
1 sheet puff pastry, thawed
1 egg, beaten

Method

Preheat oven to 220 degrees celsius

Saute mushrooms.

Mix 1 quantity of sauce mix with frozen vegetables and mushrooms.

Divide mixture between 4 oven-proof ramekins. Brush edges of ramekins with water.

Cut a thawed puff pastry sheet into 4 and place over ramekins and pinch or fold edges. Cut cross in centre of pie.

Brush with beaten egg.

Bake at 220 degrees for 15-20 minutes until pastry is crisp and golden brown.
